Make an herbal tea or jelly with anise hyssop leaves and flowers. The chopped up leaves of anise hyssop can be used in flavoring honey, by heating the honey, adding the leaves, and letting it steep, which is great on biscuits, English muffins, pancakes, waffles or just toast. Using anise hyssop in a simple syrup makes a nice base for sweet tea, cocktails, ice cream topping, drizzling over fruit and adding to whipping cream instead of using sugar and a liqueur. I use the individual flowers as a garnish for ice cream, sprinkling in sugar cookie dough and then baking them. They last for a week or so and are a nice addition to other flowers that may be growing in your garden. I use the flower stalks in flower arrangements. ![]() You will end up with more anise hyssop than you really want or need, but it is easily pulled out when it is a young, tender seedling. If you don’t harvest the flowers when they are in full color, they will go to seed, dropping their seeds everywhere near the adult plants.
